This is the right class for you if you have already been baking bread at home, maybe even developed your own starter culture. In this class we will be working with recipes that use preferments like poolish, biga and levain in order to achieve a wider variety of flavours, crumb and crust like buttery-flavoured white bread with a thin crisp crust or a bran-encrusted wholemeal bread that smells of roasted nuts. We will also discuss the process of starting your own starter culture before enjoying freshly baked bread for lunch with butter, jams, cheeses and cold meats.

Take home some sourdough starter so you can begin straight away.

Materials

Please bring an apron and a 20-25cm round bowl to take home bread dough for baking at home later.

Brigit Marx

German born pastry chef Brigit takes pride in her authentic homemade pastries, combining her love and passion for baking with premium ingredients.

It was a logical next step to develop from her beginnings, baking for family and friends, to starting her own business in the Eastern Suburbs, which she calls home since 2004. Sugarplum Bakery has grown in popularity since its beginning in 2010. From birthday cakes to small corporate functions, lunches, high teas, waffle party events and event cake stalls, everything is possible. In her attempt of sharing her love for baking, Brigit has recently started teaching baking classes, showing people how easy and fun it can be to bake your own cakes.
